Holiday Treats on a Budget

Keep in mind that any of these recipes (and any baking recipe you may find online, really) can be made gluten free with the use of Bob’s Red Mill 1 to 1 baking flour.

 

3 Ingredient Dark Chocolate Peppermint Mousse (V + GF)

This simple vegan and gluten free recipe was taken from minimalist baker, who comes up with a ton of simple, tasty, and vegan recipes – definitely worth checking out!

Servings: 4

Ingredients:

  • 1 15-ounce can coconut cream

  • 1 ½ cups dairy-free dark chocolate (at least 65% cacao), roughly chopped

  • ¼ tsp peppermint extract

Instructions:

  1. Melt chocolate until creamy and smooth

  2. Add coconut cream and melted chocolate to a mixing bowl and whisk thoroughly

  3. Add peppermint oil and mix again

  4. Cover a set mixture in fridge to chill – approximately 4 hours (it’s ready to whip when it no longer sloshes when tipped side to side)

  5. Whip until creamy and smooth with hand mixer (or whisk)

  6. Spoon 3-4 servings into separate dishes; either chill for 30 more minutes to allow the mousse to firm up more, or enjoy as it

  7. Recommended for serving: top with crushed peppermint and/or chocolate shavings or cocoa

 

Easy Chocolate Chip Cookies

There is nothing better than fresh, warm chocolate cookies. Instead of spending your money on pre-made dough, or an order from Insomnia Cookies, invest in these few ingredients and bake them fresh whenever you want!

Servings: 24 cookies

Ingredients:

  • 1 stick softened butter

  • ¾ cup brown sugar

  • 1 large egg

  • 1 tsp vanilla extract

  • ¼ tsp salt

  • 1 cup plus ¼ cup flour (NOT tightly packed)

  • 1 cup chocolate chips

Instructions:

  1. Preheat oven to 350 F

  2. Mix butter and sugar until fluffy; add vanilla and egg and mix until fully incorporated

  3. Stir in flour, salt, and chocolate chips

  4. Scoop mounds (~2 Tbsp) onto ungreased cookie sheets

  5. Bake at 350 degrees until just set around the edges; about 8-12 minutes (these cookies don’t brown a lot)

  6. Allow to cool on baking sheets for five minutes

 

Easy Batter Fruit Cobbler

Despite how fantastic chocolate is, sometimes we all need a break from it. That’s when this simple fruit cobbler will really come in handy! Still sweet and delicious, without the sometimes overwhelming richness of chocolate.

Ingredients:

  • 4 tablespoons butter

  • ¾ cup all-purpose flour  

  • ¾ cup sugar

  • 1 tablespoon sugar

  • 1 teaspoon baking powder

  • ¼ teaspoon salt

  • ¾ cup milk

  • 12- ounce package of frozen berries (or 2 cups sliced fresh peaches or nectarines)

Instructions:

  1. Preheat oven to 350 F

  2. Put butter in 8-inch pan; set in oven to melt. Once butter has melted, remove from oven.

  3. Whisk flour, ¾ cup sugar, baking powder, and salt in small bowl. Add milk. Whisk again.

  4. Pour into pan, then scatter fruit over batter. Sprinkle with remaining 1 Tbsp of sugar.

  5. Bake until brown and fruit bubbles (50-60 minutes).
